Bakaliaros Tsiladia (Salted Cod in Tomato Sauce)
Ingredients for 1 serving:
- Desalted cod fillet
- Onion
- Garlic
- Tomato
- Tomato paste
- Sun-dried tomato
- Balsamic vinegar
- Messinia black raisins
- Bay leaf
- Kalamata PDO extra virgin olive oil
- Parsley
- Salt
- Pepper
- Finely chopped cured meat (optional, ½ cup)
Instructions:
In a pan, heat the olive oil. Add the garlic and sliced onion. Sauté until softened. Grate the tomato and add it to the pan along with the tomato paste. Stir in the Corinthian raisins and mix well. Take a deep pot and place the tomato slices at the bottom, then lay the fish on top. Add the bay leaf. Season with salt and pepper, and add a little lukewarm water if needed, until the sauce almost covers the fish. Cook on low heat until the sauce thickens and the oil rises to the surface. Serve the dish warm.
